How to make vegan strawberry curd

Wash, hull, slice strawberries.

Add strawberries & sugar in blender.

Purée until smooth.

In small bowl, add lime juice & corn starch.

Whisk until smooth.

Add lime juice/ cornstarch mixture to puréed strawberries in blender and purée until smooth. (At this point you can strain the mixture to remove seeds, I chose not to do this step.)

Pour back into saucepan and cook over medium heat until mixture starts to boil.

Stir frequently, and cook a few more minutes or until it thickens.

Pour into heatproof containers. Let cool to room temperature, then store in refrigerator.
